Salade Liégeoise, a very old and authentic Belgian speciality It is called salad but it is a tasty and complete hot dish. You can also eat it lukewarm or cold ... and even the next day is even better! As the name suggests, this is a rural and very old specialty of our beautiful region called Luik in Belgium (Liège in French). Ingredients
  • 500g boiled potatoes
  • 500g boiled green beans
  • 3 big tomtatoes, diced
  • 3 big onions, diced
  • 300g smoked bacon
  • 500 ml water
  • a bit beef stock cube
  • saucebinder
  • pepper to taste


Full recipe

Preheat oven to 170°C degrees.
Steam 500 g potatoes and 500 g green beans for 20 minutes. Season with salt.
Melt some butter on medium high heat.
Add 3 diced onions. Fry a couple of minutes.
Add 300 g smoked bacon. Fry a couple more minutes.
Add 500 ml of water.
Add some vinegar.
A little bit of beef stock cube.
Pepper to taste.
Add some sauce binder. Let it come to the boil and allow to thicken a bit.
Pour potatoes and beans in an oven dish.
Add 3 big diced tomatoes.
Pour the sauce over the vegetables and combine well.

You can eat this warm, lukewarm or cold.
I prefer it warm !! So I put the dish a couple of minutes in a hot oven !
