Roasted pumpkin soup for Halloween

October and the shops are full of pumpkins.
Who says pumpkin, immediately thinks of Halloween and its hollowed pumpkins with candles. Although Halloween itself is celebrated in the night of October 31 on November 1, the entire month of October is dedicated to the preparation of this festival (fancy dress parties, decoration, cutting of pumpkins, etc.).
I made this delicious roasted pumpkin soup for Halloween full of vegetables to build a good resistance against the cold winter weather that is nearby. To give the vegetables some extra flavor, I first roasted them in the oven.

Highly recommended ! Ingredients (1,5 -2 liter soup)
  • 1 tomato
  • 1 small pumpkin
  • 3 red onions
  • 2 cloves of garlic
  • dried rosemary
  • garam masala
  • salt to taste
  • pepper to taste
  • olive oil
  • 1,5 - 2 liter of chicken stock

Cut the pumpkin in quarters, remove the seeds, peel and cut in small pieces.

Peel the onions and cut in 4.
Peel the garlic.
Cut the tomato in smaller pieces.

Take an oven tray with some baking paper and divide the vegetables over the tray.
Add some salt, pepper, dried rosemary and garam masala over it.
Sprinkle quite some olive oil over it and combine well.

Put in a pre-heated oven for 30 min.

Pour some olive oil in a big pot on medium high heat.
Transfer the vegetables into the pot and add 1,5 liter of chicken stock.
Let simmer gently for 15 minutes.
Mix the soup.
