Stuffed zucchini / courgette with minced meat and cherry tomatoes

Looking for the best stuffed zucchini recipe? This delicious stuffed zucchini with minced meat and cherry tomatoes is simple and completely homemade. An extremely easy, fast and delicious recipe. I used rice, but you can also use quinoa or blé.
Ingredients (serves 4)

Pre-heat the oven (180°C).
Cook the rice according to the instructions on the package.
Cut off the ends of the zucchini. Cut in half and hollow them out.
Chop the zucchini flesh.
Chop the garlic and the onion.
Cut the cherry tomatoes in quarters and chop the parsley.
Heat olive oil in a pan on medium high heat.
Fry the onions and garlic for 2 minutes.
Add the minced meat and crumble it in small pieces while it cooks.
Add the tomatoes and the zucchini flesh.
Stir in 50 ml of beef stock, put lid on and let simmer for 5 minutes.
Add the cooked rice and the parsley.
Pour some olive oil in an oven dish and transfer the zucchini to the dish.
Fill them with the mixture and sprinkle shredded cheese on top.
And into the oven for 30 minutes.
