The best Hungarian beef goulash recipe

What we call Goulash is actually soup in Hungary (Gulyas). What we call Goulash, the stew, is called Pörkölt in Hungary. There are many varieties of Pörkölt, also with fish, but I'm going to make the beef version. 

Ingredients :
  • 500 g of beef
  • 2 red onions, chopped
  • 2 cloves of garlic
  • 1 red bell pepper, chopped
  • 250 g of mushrooms
  • 2 tbsp of tomato puree
  • 1 tsp of oregano
  • 1 tsp of caraway
  • 1 tsp of marjoram
  • 1 tbsp of paprika powder
  • 150 ml of red wine
  • Some butter
  • Pepper to taste
  • Salt to taste
  • 300 ml of beef broth


Full recipe

Melt some butter in a skillet on medium high heat.
Bake the beef golden brown. Season with pepper and salt.

Remove the beef from the pan.
Add the chopped onions, the garlic, the bell pepper and the mushrooms. Fry a couple of minutes.
Add 2 tbsp of tomato puree and fry 2 minutes to remove the bitterness.
Season with pepper, salt, oregano, caraway, marjoram and paprika powder. 

Add 150 ml of red wine and 300 ml of beef broth.

Close the pressure cooker and let it cook for 50 minutes.
When you make it without a pressure cooker, it'll need +/- 2 hours on a low heat.

I served it with boiled potatoes !
