Delicious "Belgian" fish stew

Hi,
This is a delicious Belgian fish stew recipe which is really worth trying.

Ingredients (serves 2) :
  • 4 pieces of salmon 
  • 4 pieces of cod 
  • 2 sole fillets 
  • 5-6 scallops 
  • 4 prawns (scampi) 
  • 400 ml fish stock 
  • 40g of butter 
  • 40g of flour 
  • 100 ml of white wine 
  • 250 ml of cream 
  • some milk when sauce is too thick 
  • 125 g of mushrooms 
  • some shredded cheese 
  • pepper and salt to taste
How to make it :
  1. Melt some butter on medium high heat
  2. Add 125g of mushrooms, sliced
  3. Season wit pepper and salt and fry a couple of minutes
  4. Remove from pan and keep the liquid for the sauce
  5. Heat 400 ml of fish stock (no boil)
  6. Poach the fish for 1 minute and remove from the pot
  7. Let the stock come to the boil and reduce by half
  8. Make a roux : melt 40g of butter and add 40g of flour
  9. Bake 1 minute while stirring
  10. Add the reduced fish stock and the mushroom liquid
  11. Add the wine and the cream
  12. When still too thick, add some milk
  13. Season with salt and pepper to taste
  14. Transfer the fish into a greased oven dish (I made 2 separate)
  15. Add the mushrooms
  16. Add a handful of fresh shrimps
  17. Cover with some shrimps
  18. Sprinkle some shredded cheese on top
  19. And into a pre-heated oven (200° C) for 20 minutes or until the cheese turns golden brown
