Stuffed chicken breast with spinach, herbs and tomatoes

Hi,
Pascale Naessens, a famous Belgian Chef, wrote a book "Puur Genieten", (translation : enjoying to the fullest) and still staying healthy and slim. The book is full of delicious food, with fresh and pure ingredients. The real pure kitchen ! Today I chose the stuffed chicken breasts with spinach, herbs and tomatoes. A real delight (Keto friendly) and very easy to prepare ! Thanks to Pascale Naessens and Okokorecepten.nl for the inspiration !
Ingredients (serves 2) :
  • 2 chicken breasts 
  • olive oil 
  • 300g fresh spinach 
  • 2 bunches of fresh basil 
  • 1 tomato, sliced 
  • 2 rosemary sprigs 
  • some lemon slices
How to make it :
  1. Butterfly 2 chicken breasts
  2. Place plastic foil over them, beat them flat to make them larger
  3. Rub them with olive oil, season with pepper and salt and set aside
  4. Heat a good splash of olive oil over medium high heat
  5. Add 300g of fresh spinach
  6. Fry it a couple of minutes while stirring
  7. Add, if it has shrunk, 2 bunches of fresh basil and season with salt and pepper
  8. Remove from heat
  9. Place a layer of spinach on 1 half of the chicken breast
  10. On top of the spinach a layer of tomato slices and a sprig of rosemary
  11. Fold the chicken breast and tie together with some kitchen rope (watch video to see how)
  12. Place them in a greased oven dish
  13. Bake in a pre-heated oven (180°C) for 30 minutes
