Stuffed chicken fillets full of Mediterranean flavours

Hi,
You want to do something different with a simple chicken fillet, then you really must try this recipe. It is super delicious !!

Ingredients (serves 2) :
  • 2 chicken fillets, butterflied 
  • pepper salt 
  • some finely chopped rucola 
  • some roasted pine nuts 
  • some finely chopped dried tomatoes (on oil) 
  • kitchen rope 
  • 150 g thinly sliced pancetta 
  • some cherry tomatoes 
  • some olive oil 
  • fresh basil leaves
How to make it :
  1. Preheat the oven to 180 ° C.
  2. Butterfly each chicken fillet and flatten it by covering it and beating it with a rolling pin
  3. Season with salt and pepper.
  4. Cover with the rucola, the pine nuts, dried tomatoes and some fresh basil leaves. Drizzle with some oil from the sundried tomatoes. 
  5. Roll them up and wrap them in the pancetta. Tie up with kitchen rope.
  6. Bake golden brown in some olive oil, add some cherry tomatoes and then put the pan for another 10 minutes in a preheated oven at 180 ° C
  7. Remove the rope, cut the chicken into slices and finish with basil leaves.
