Delicious almond pear pie

Hi,

I cannot let the pear pie season go by without sharing this delicious Almond Pear Pie! Inspired by the French Tarte Bourdaloue, this pear version consists of traditional almond cream topped with browned/caramelized pear slices. If you’re tired of the old classic apple pie, give this a try. You won’t regret it! Ingredients (pie 28 cm) :
  • 200 g of butter 
  • 300 g almond powder 
  • 250 g of sugar 
  • 1 or 2 pears 
  • 4 eggs 
  • 1 sheet of puff pastry or sand dough 
  • 1 tbsp of sugar (to sprinkle) 
  • baking beans
How to make it :
  1. Place the dough in a pie mold and fold it nicely into the mold.
    Press down the dough very gently.
    Bend over the edges to give it a nice artisanal look.
  2. Use a fork to prick the surface of the dough.
    These tiny holes will prevent the dough from puffing up.
  3. First we're going to blind bake the pastry. Blind baking a pie crust is necessary when it will be filled with an unbaked filling in which the crust must be fully baked.
    So how do we do that : Line the pie crust with foil or baking paper. Then fill it with baking beans to ensure the crust retains its shape while baking.
    Place it 10 minutes in a pre-heated oven (170°C - 235°F).
  4. In the meantime you can make the filling.
    Mix 4 eggs, 250g of granulated sugar and 200g of butter at room temperature. Mix it a couple of minutes until the colour turns lighter.
  5. Next, add 300g of almond powder and some almond essence and mix until well combined.
  6. Remove the baking beans from the pie crust and fill it up with the almond mixture.
  7. Peel 1 or 2 pears, cut them in quarters and remove the core. Slice the pear and place the slices on top of the almond mixture. Sprinkle some sugar on top of the slices in order to caramelize in the oven.
  8. Place the pie 40 min. in a pre-heated oven (170°C - 325°F) and another 40 min. in 150°C - 300°F.
  9. Take it out of the oven and let cool down. 
  10. Enjoy !!
