Rolled sole fillets in a creamy mushroom wine sauce

Hi,

Impress your guests or family with these delicious rolled sole fillets in a creamy mushroom wine sauce ! Thanks to "Libelle-lekker.be" for the inspiration !! Ingredients (serves 2) :
  • 6 rolled sole fillets 
  • 125g of mushrooms, sliced 
  • juice of 1/2 lemon 
  • some butter 
  • 1 diced onion or shallot 
  • 1/2 tbsp of flour 
  • 150 ml of fish stock 
  • 150 ml of white wine 
  • 100 ml of cream 
  • 50g of shrimps 
  • freshly chopped chives 
  • pepper and salt
How to make it :
    1. Slice the cleaned mushrooms. Halve the lemon. Squeeze the juice of 1 half. Cut the other half into 4 pieces. Fry the mushrooms in some butter with a spoon of lemon juice, season with salt and pepper and set aside.
    2. Fry the shallots and sprinkle with flour. Deglaze with the fish stock and white wine and stir well. Cook for 5 minutes against the boil. Add the cream and let it thicken on a low heat until sauce thickness. Sieve and season with salt and pepper.
    3. Season the fillets of sole on the inside (gray side) and roll them up. Steam them in 8 to 10 minutes.
    4. Put 3 sole fillets on each plate. Finish with the sauce, some shrimps, a piece of lemon and chives. Serve with mashed potatoes.
    5. Enjoy !!
